Cacciucio (Tuscan Fish Soup)

6 TB olive oil
½ cup chopped onions
6 garlic gloves, diced
2 celery stalks, diced
1 lb. fresh ripe tomatoes, diced
1 peeled, diced carrot
3 cups dry white wine
1 lb. fresh clams in shell
1 lb. white fish (swordfish, halibut or sea bass)
1 lb. large shrimp, peeled, deveined (tails on)
3 tsp chopped Italian parsley
salt and pepper to taste
In a large pot, combine olive oil, onions, garlic, carrot, and celery. Cook over medium heat for five minutes.
Add tomatoes, wine and clams and cook for five minutes.
Add shrimp and fish. Bring to a boil, then reduce heat to simmer for five minutes.
Correct seasoning with salt and pepper, add parsley. Serve in bowls.
Serves six.
Grilled Mahi Mahi
From Lela Wegmann, s/y Belline II
2 pounds mahi mahi fillets, skin on
1 TB prepared mustard
1/3 cup olive oil
½ tsp sea salt
1/3 cup frozen limaid concentrate, thawed
2 tsp garlic, minced (or more to taste)
hot sauce (as much as you can bear)
Cut fish into serving-size portions. Arrange in single layer in a deep dish.
Combine remaining ingredients in separate bowl. Mix well.
Bathe fillets in marinade. Turn to coat evenly.
Rearrange fillets in deep dish so that they are stacked two pieces high. Stack them skin-to-skin. Cover dish and let sit in refrigerator for at least two hours.
Place fish on high-heat barbecue grill, non-skin side down, for one to two minutes. Turn, baste with remaining marinade, and grill an additional four to five minutes.
Serve with your favorite rice and vegetables.
Apple Cake

4 Red Delicious apples
¾ cup brown sugar
¾ cup raisins
1½ cups whole wheat flower
5 tsp cornstarch
¾ tsp salt
¼ tsp ground cloves
½ cup butter
2 large eggs
2 TB milk
sugar
Peel, core, quarter, and slice apples. Toss with brown sugar and raisins. Set aside.
In a separate bowl, combine flour, cornstarch, salt and cloves. Cut in butter.
Combine dry mixture with apple mixture. Set aside.
In a separate bowl, wisk together eggs and milk. Incorporate into dry/apple mixture.
Place into a spring form pan sprayed with non-stick cooking spray. Bake at 375 degrees about one hour.
Let cool, then dust with sugar to serve.
